We keep a tradition alive.

El Trigal opened its doors on West Montrose Avenue with one conviction: that the pan dulce of your childhood doesn't have to be a memory. Every morning, our bakers arrive before dawn to shape, fill, and bake using methods passed down through families — not focus groups.

We source masa directly, grind our own spices, and fold butter into our pastries the way it's always been done. No shortcuts. No frozen dough shipped in from somewhere else. Just flour, water, heat, and patience — the four ingredients every great bakery actually needs.
